The salad queen is at it again with another yummy, nutrient-dense, satisfying recipe. (If you missed the previous ones, be sure to check out her iconic shake-a-salad Health Nut order and the power greens and nut “meat” salad she’s had on heavy rotation recently.)
In addition to being super simple to make, this salad is packed with healthy fiber from butternut squash, cauliflower, and Brussels sprouts. It’s also a great make-ahead dish. Just roast the veggies, make the dressing, and store them in the fridge until you’re ready to toss them with a few handfuls of lettuce. Easy peasy.

Kourt's Roasted Butternut Squash Salad Recipe

Ingredients:
Salad:
2 cups butternut squash, cubed
2 cups cauliflower florets
2 cups Brussels sprouts, halved
A few handfuls of arugula, kale, or spinach (or a combo of the three)
EVOO
Salt and pepper to taste
Dressing:
2 tablespoons mustard of your choice
1 teaspoon maple syrup
1/3 cup avocado oil
1/2 teaspoon salt
1/2 lemon, juiced
Garnish:
Pomegranate seeds
Walnuts
Instructions:
1. Preheat the oven to 450 degrees Fahrenheit.
2. Place butternut squash, cauliflower, and Brussels sprouts on a baking sheet. Drizzle with EVOO and season with salt and pepper to taste.
3. Roast until they get a slight char, about 12 to 15 minutes.
4. Set the veggies aside to cool.
5. Combine all of the dressing ingredients in a bowl, and whisk together.
6. Put greens of choice in a bowl, top with cooled roasted veggies, and drizzle with the dressing.
7. Add the garnishes and enjoy!
