Kourtney the salad queen is at it again with another yummy, nutrient-dense, satisfying recipe. (If you missed the previous ones, be sure to check out her iconic shake-a-salad Health Nut order and her blood sugar-stabilizing egg salad salad.)
In addition to being super simple to make, this salad is packed with healthy fiber from butternut squash, cauliflower, and Brussels sprouts. It’s also a great make-ahead dish. Just roast the veggies, make the dressing, and store them in the fridge until you’re ready to toss them with a few handfuls of lettuce. Easy peasy.

Kourtney's Roasted Butternut Squash Salad Recipe

Ingredients:
Salad:
2 cups butternut squash, cubed
2 cups cauliflower florets
2 cups Brussels sprouts, halved
A few handfuls of arugula, kale, or spinach (or a combo of the three)
EVOO
Salt and pepper to taste
Dressing:
2 tablespoons mustard of your choice
1 teaspoon maple syrup
1/3 cup avocado oil
1/2 teaspoon salt
1/2 lemon, juiced
Garnish:
Pomegranate seeds
Walnuts
Instructions:
1. Preheat the oven to 450 degrees Fahrenheit.
2. Place butternut squash, cauliflower, and Brussels sprouts on a baking sheet. Drizzle with EVOO and season with salt and pepper to taste.
3. Roast until they get a slight char, about 12 to 15 minutes.
4. Set the veggies aside to cool.
5. Combine all of the dressing ingredients in a bowl, and whisk together.
6. Put greens of choice in a bowl, top with cooled roasted veggies, and drizzle with the dressing.
7. Add the garnishes and enjoy!
