How to Make  GLUTEN-FREE VEGGIE FRIED CAULI RICE

Veggie fried cauli rice for lunch or dinner? Yes, please! Try this carb-free take on fried rice. It’s as easy as they come, and it’s chock-full of nutritional benefits. Adding shrimp is optional and is low in calories yet packed with protein. Shrimp is also known for being great for eye and brain health and bone strength, and is even considered to be a mood booster. It’s also low in fat and mercury, but full of iron, zinc, and vitamins B3 and D. Check out the below recipe for the simple, flavorful, and kid-approved version of this classic Asian dish.

Gluten-Free Veggie Fried Cauli Rice

Recipe Type:Meal

Serving Size:3-5
Prep Time:5 minutes
Cook Time:25 minutes
Total Time:approx. 30 minutes

Ingredients:

2 tablespoons avocado oil
¼ cup chopped onion
1 bag of organic frozen mixed veggies (green beans, corn, peas, and carrots)
2 tablespoons sesame oil
2-3 dozen raw and deveined shrimp (optional)
1 tablespoon ghee
2 bags of frozen cauli rice
2 organic eggs
1 tablespoon garlic salt
2 teaspoons garlic powder
1 pinch of pepper
Splash of gluten-free soy sauce

Instructions:

1. Heat the avocado oil in a wok and add in onion and frozen mixed veggies.
2. Sauté for several minutes until cooked through.
3. Season with garlic salt and pepper.
4. Set aside in a separate bowl.
5. In the same wok, add sesame oil and the raw shrimp.
6. Season with a pinch more of garlic salt and pepper.
7. Cook until lightly browned on each side.
8. Set shrimp aside in a separate bowl.
9. Add 1 tablespoon of ghee to wok.
10. Add cauli rice.
11. Season with garlic powder and pepper and cook for just a couple of minutes, or until cauli rice is translucent.
12. Add everything else back in.
13. Crack two eggs into the cauli rice mixture and mix around in the wok for several minutes until egg is cooked.
14. Don’t overcook cauli rice or it may get mushy.
15. Add a splash of (gf) soy sauce, mix around, and voilà!
