This gluten-free, protein-packed snack from Nikki Kovacs does exactly that. “The tip here is to make these early on in the week or over the weekend, so you’ve got a quick and easy snack to grab on the go,” she shares.
This recipe is just a baseline. There are a million different ways to make these bars your own. Kovacs has a few flavor recommendations. “If you love cranberry, chocolate, and coconut, you can add all of these ingredients to a processor with dates and oats, and you’ve got yourself a different bar flavor,” she says. “Similarly, you can add freeze-dried blueberries, macadamia nuts and cinnamon for a blueberry muffin flavor.”
Of course, you can swap in the nuts, seeds, and add-ins you like best. The key here is trying new things and making the snack you’ll always want to reach for.
