Overnight oats are one of our favorite forms of self-care. A perfect little package in the fridge, ready-to-eat, and crystal clear evidence that last-night you really loves morning you and wants to make your day easy and delicious.
We mean, come on.
Not only that, but overnight oats are comforting, nutritious, yummy, energy-packed, and super adaptable. Although this recipe requires a touch more effort, slicing a small squash and roasting it while cooking dinner or doing your bedtime skincare routine really takes minimal effort. It’s a great way to get more nutrient-packed squash into your diet (butternut squash is a great source of fiber and also has a low glycemic index, which means the carbs are digested more slowly).
