The delicious snack tastes straight out of Disneyland. We teamed up with Nikki Elisheva of My Sweet Belly to share her recipe for healthy-ish pink popcorn.
What makes it perfectly pink? Beetroot powder, “which is associated with improving blood circulation, monk fruit sugar so that there’s no blood sugar spike (low calorie/0g sugar). Fun fact: Monk fruit sugar was discovered by monks in Asia, and its molecules are so large that it’s not absorbed into the blood—hence no blood sugar spike. This is not to say that you should replace all sugar items with it, but it’s a great low-sugar/no-blood-sugar-spike option,” Nikki shares. Learn the step-by-step instructions below.
