Another day, another matcha recipe we’re obsessed with.
This matcha chia seed pudding is super easy to make (basically a requirement for us), and is bursting with good-for-you benefits.
First off, we’ve got matcha. This powerhouse superfood is packed with antioxidants, and as we know, antioxidants help reduce the cell damage that can speed up the aging process. Matcha is also a good way to get your caffeine fix in the morning without the jitters, because it a) has less caffeine than coffee and b) contains a compound called L-theanine that helps to slow the absorption of caffeine into the bloodstream.
The other star of the show, chia seeds, are an excellent plant source of omega-3 fatty acids that can help with everything from brain health to healthy hair. These seeds also contain lots of fiber (something most of us don’t eat enough of), which contributes to a healthy gut microbiome. And because fiber is digested pretty slowly, it helps you feel fuller for longer.
You can use any dairy-free milk for this, but we think the nuttiness of cashew milk adds depth to the flavor, especially with coconut cream for extra creaminess. Feel free to adjust the amount of maple syrup to taste.
