Tuna salad—the vegan way. The simple lunch or dinner option is packed with protein and makes for a delicious alternative to ‘‘chicken of the sea.” (Bonus points if you got that pop culture reference.) Back to the recipe though. Ahead, we’re sharing two ways to make the “tuna filling,” which you can serve with lettuce wraps for a nice fresh crunch or your choice of bread for a more traditional take on the meal.

The first option is from one of our amazing recipe contributors, Nikki Elisheva, and the second is from Jen Ceballos, the creative brain behind @endlesslyloveclub.

Foolproof Vegan Tuna Salad

Recipe Type:Lunch/Snack

Serving Size:2-3

Total Time:15 mins
Ingredients:

15 oz chickpeas, rinsed
3 tablespoons vegan mayonnaise or Greek yogurt
1 teaspoon dijon mustard
1 tablespoon maple syrup
1/4 cup diced red onion
4 scallions, finely chopped
1/4 cup celery, finely chopped
1/4 cup pickles, finely chopped (I used half sours)
2 teaspoons capers, finely chopped
1 tablespoon sprouted pumpkin seeds
Pinch of pink salt and pepper
1 tablespoon tahini (optional)
Lemon, to taste (optional)
Lettuce cups

Instructions:

Mix everything together and enjoy!
