VIETNAMESE Avocado Shake

Kat Lieu, author of Modern Asian Kitchen, is all about small, flavorful dishes that are easy to learn and even easier to fit into your weekly rotation. Lieu’s focus on plant-based recipes range from simple miso soups to cold papaya salads to matcha ramen bowls (you had us at “matcha”!).

Below, Kat shares a delicious Vietnamese avocado smoothie recipe, aka our new favorite way to get healthy fats into our diet.

Vietnamese Avocado Shake

Recipe Type:Breakfast
Serving Size:2 servings
Prep Time:10 minutes

Ingredients:

2 ripe avocados, peeled and pitted
1/4 cup liquid sweetener of choice (such as vegan condensed milk), adjusted to taste
1 teaspoon red or white miso (add more if you love umami)
Vanilla extract (optional)
Lemon juice
About 1/4 cup ice
About 1/2 cup milk (any kind)

Instructions:

1. Combine all ingredients in a blender.
2. Blend until smooth and creamy.
3. Taste and adjust the sweetness to taste.
4. Pour into glasses, top with your favorite fruits or a drizzle of sweetener, and serve immediately.
