Wake and bake these vibrant pancakes this weekend. We teamed up with Nikki Elisheva of My Sweet Belly to share her recipe for an easy and healthy(er) version of everyone’s favorite breakfast dish. The gluten-free and vegan-friendly meal only requires three main ingredients, plus whichever superfood you choose to mix in for added wellness benefits. Your kids are sure to enjoy how colorful the pink and blue pancakes look on their plates.
“For a lower calorie option, swap traditional maple syrup for monk fruit (keto) maple syrup, or use coconut yogurt (you can add additional powders to change its color). Both are delicious,” Nikki shares. Find out how to make the simple morning meal below.
Simple Superfood Pancakes

Ingredients:
– 1 banana
– 1 cup gluten-free rolled oats
– 1 cup your choice milk
For blue pancakes: use blue spirulina (has most of the essential amino acids to support a healthy, quick mind) or blue matcha powder (about 1-2 teaspoons)
For chocolate pancakes: add cacao or cocoa (about 1/2 tablespoon, or until desired chocolate flavor)
For pink pancakes: add raspberry/beet/dragon fruit powder (add by teaspoon until desired color)
For traditional pancakes, with a twist: add maca (a great way to get energized) or ashwagandha (induces mind-body relaxation)
Instructions:
1. Blend all ingredients together until smooth.
2. Using a nonstick pan, pour 1-2 tablespoons of batter and flip once bubbles form (approximately two minutes per pancake).
