Chef K’s Vegan Christmas Sugar Cookies

It’s the season for indulging, so when we saw Chef K post her colorful sugar cookies, we knew we had to get the deets. Turns out these colorful sweet treats are not only delicious, but also vegan.

Chef K's Holiday Sugar Cookies

Ingredients:

Cookies:
1/2 cup Monty’s Cultured Butter

1 cup granulated sugar
1/2 cup Monty’s Original Cream Cheese
2 teaspoons pure vanilla extract

1/2 teaspoon pure almond extract

2 1/2 cups all purpose flour

1 teaspoon baking powder
1/4 teaspoon baking soda

1 tablespoon cornstarch

1/4 teaspoon salt

Ingredients:

Frosting:
1/2 cup Monty’s Cultured Butter
2 cups powdered sugar

1 teaspoon pure vanilla extract

1 tablespoon oat milk or almond milk

Food coloring of choice

Sprinkles for decorating

Instructions:

Cookies:
1. Preheat the oven to 375° F.
2. In a large bowl, cream together the softened Monty’s Cultured Butter and sugar until fluffy. Beat in Monty’s Original Cream Cheese and vanilla and almond extract. Make sure everything is mixed well.
3. Add the flour, baking powder, baking soda, cornstarch and salt. Mix on low until just combined.
4. Shape the dough into a disk, wrap in plastic, and place in the refrigerator to chill for about an hour.
5. Roll the dough out about 1/4- to 1/3-inch thick, depending on how you like your cookies. 
6. Use a two- to three-inch round cookie cutter to cut the cookies. 
7. Place the cookies on baking sheets lined with parchment paper or silicone. 
8. Bake for 9 to 10 minutes until they are just lightly golden on the bottom. 
9. Let the cookies cool completely before frosting.

Instructions:

Frosting:
1. In a large bowl, beat the Monty’s Cultured Butter with a mixer for about three minutes, making sure to scrape down the sides of the bowl. 
2. Add the powdered sugar, vanilla, and non-dairy milk. Mix until well combined and fluffy.
3. If using food coloring, mix it in now, one drop at a time for the desired color.
4. Frost the cookies with a layer of frosting, and decorate with sprinkles.

5. Serve and devour!
