Vegan Strawberry Matcha Thumbprint Cookies

Some cookies are good. Others are very hard to stop at one. And while we are never above a classic, we prefer cookies with a little more personality.

These Vegan Strawberry Matcha Thumbprint Cookies turn our favorite flavor combo into something that looks far fussier than it is. Matcha gives these cookies that gorgeous green hue, while the strawberry jam center adds just the right pop of sweetness.

They’re soft, buttery, and bakery-level pretty, but take less than 20 minutes to make. Ready to make your own? See the full recipe below.

Vegan Strawberry Matcha Thumbprint Cookies

Ingredients:

3/4 cup vegan butter
1/2 cup unrefined sugar
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
2 tablespoons matcha powder
1/2 teaspoon salt
1 tablespoon water
1/4 cup strawberry jam

Instructions:

1. Preheat the oven to 350°F and line a baking tray with parchment paper.
2. In a bowl, mix the vegan butter, granulated sugar, and vanilla extract until fluffy and well combined.
3. In a separate bowl, whisk together the flour, matcha powder, and salt, ensuring the matcha is evenly distributed throughout the dry mixture.
4. Gradually incorporate the dry ingredients into the wet ingredients, mixing in batches. Finish by adding the tablespoon of water. The dough will be slightly crumbly.
5. Roll 1 1/2 tablespoons of dough into a ball and place on the parchment-lined tray about 2 inches apart. Gently flatten each ball and use the pad of your finger to create an indent in the center. Fill the indent with strawberry jam.
6. Bake for 15 minutes, until the cookies develop a light bronze tint. Allow the cookies to cool completely on the baking tray before removing them.
