Crunchy, tangy, and protein-packed, this Italian chopped salad is worthy of its reputation. Loaded with crisp romaine and iceberg, cucumber, tomatoes, chickpeas, pepperoncini, mozzarella, grilled chicken, and tossed in a simple red wine vinaigrette, it’s the kind of chopped salad that somehow tastes even better with every bite. Ingredients

Salad:
1 head romaine lettuce, finely chopped
1/2 head iceberg lettuce, finely chopped
1/2 English cucumber, finely chopped
1 cup cherry tomatoes, quartered
1 cup canned chickpeas, strained, rinsed, and finely chopped
1/4 cup pepperoncini, finely chopped
3/4 cup shredded mozzarella
4 grilled chicken breasts, chopped
Dressing:
1/4 cup extra virgin olive oil
5 tablespoons red wine vinegar
1 1/2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried Italian herbs

Directions

1. In a small bowl, whisk together all dressing ingredients until fully combined.
2. In a large bowl, combine the romaine and iceberg lettuce.
3. Add the chopped cucumber, cherry tomatoes, chickpeas, pepperoncini, mozzarella, and grilled chicken.
4. Drizzle with dressing, toss well, and serve.

Additional Notes

  • For meal prep, combine all salad ingredients except the dressing. Add the dressing just before serving.
  • Optional add-ins: chopped olives, salami, avocado, sun-dried tomatoes, or roasted bell peppers.
