The next best thing to enjoying your Thanksgiving feast is getting creative with how to eat your leftovers. Since your fridge is most likely packed with a decent amount of turkey and side dishes after the big meal, we wanted to share four delicious ways to utilize the remaining food. Any other year, we’d recommend dropping off leftovers to a family in need, but due to COVID-19, that’s not the safest option this holiday. As a way to waste less this Thanksgiving, we’re providing yummy ideas that are light and clean so you can make the most of your family’s leftovers. Learn the recipes below.
Use this chicken salad recipe and just replace the chicken with your leftover turkey. You can shred it and follow the recipe exactly. This turkey salad can be put in a sandwich or over any greens for a salad. You can even drizzle with some leftover cranberry sauce for extra sweetness (no dressing necessary).
Sweet Potato Kale Frittata
Serves: 4
Ingredients:
-6 eggs
-1 cup half and half
-1 teaspoon salt
-1/2 teaspoon pepper
-2 tablespoons olive oil
-2 cups leftover sweet potatoes
-1/2 red onion
-1 teaspoon garlic
-2 cups kale or spinach
-1 cup cheese (goat, cheddar, etc.)
Instructions:
1. Preheat oven to 350° F.
2. In a bowl, whisk the eggs and add half and half, salt, and pepper. Set aside.
3. In an oven-safe pan, heat a tablespoon of olive oil and sauté the sweet potatoes until golden. Set them aside.
4. Heat another tablespoon of olive oil. Sauté the red onion and garlic. Once browned, add the kale or spinach and sauté until tender.
5. Add the potatoes back in and mix. Pour the egg mixture evenly on top and cook for a couple more minutes.
6. Top with the cheese and bake for 10-15 minutes until eggs are set.
Turkey and Stuffing Stuffed Peppers
You can substitute cooked rice if you have leftovers.
Ingredients:
-1 egg, beaten
-2 cups shredded turkey
-2 cups stuffing (or cooked rice)
-Salt and pepper to taste
-4 yellow and red bell peppers, hollowed out
-1 1/2 cups shredded mozzarella
Instructions:
1. Preheat oven to 350° F.
2. In a bowl, combine the beaten egg, turkey, and stuffing or cooked rice. Season lightly with salt and pepper.
3. Spread the hollowed-out peppers on a baking sheet. Spoon the mixture into the peppers and top with cheese.
4. Bake until the peppers have softened and browned and the cheese has melted. You can top with Parmesan and parsley.
Ingredients:
-2 cups shredded turkey
-1/2 cup breadcrumbs, stuffing, or almond flour
-1 large egg
-1/2 red onion
-1 teaspoon garlic
-1 teaspoon salt
-1/2 teaspoon pepper
-1/4 cup Parmesan cheese
-1/2 cup chopped parsley
-Drizzle of olive oil
You can also add bacon bits in the mix for extra flavor.
Instructions:
1. Add all ingredients into a bowl and mix. You can mix by hand or with a rubber spatula. If the mixture is too dry, you can add another egg.
2. Measure out the patties however big or small you like and throw them on a baking sheet, pan, air fryer, or griddle. Let them brown a bit, and serve them over greens or in a bun.
