It’s no secret that we think avocado toast is pretty much the perfect breakfast. It’s tasty, full of healthy fats and fiber, and it’s easy to make. To switch things up, we’ve been making the sweet potato avocado toast recipe that Danielle Brown, founder of HealthyGirl Kitchen, shared with us. It calls for long slices of roasted sweet potato as the “toast,” which is then topped with mashed avocado, cucumber, olive oil, and sesame seeds. The sweet potato provides a delicious twist, and it’s packed with vitamins and minerals, like inflammation-fighting vitamin A and immunity-boosting vitamin C. “Pro tip: Prep and roast a bunch of sweet potato slices for the week so they are ready to go. In the morning, just pop in the toaster to warm,” she says.
