Salads don’t have to be boring.
Case in point: this yummy Spicy Cucumber Pomegranate Salad from Ana Negoita (aka @essen_paradies). It’s the latest dish to make it into our rotation of easy, healthy recipes.
Not only is it full of vibrant flavors, it’s also packed with good-for-you ingredients like cucumbers (hydrating and low in calories), pomegranate (rich in antioxidants), mint (aids digestion), and feta (adds protein and calcium).
This is an easy recipe to make the night before. Just refrigerate the salad and dressing separately in airtight containers, and add the dressing before serving to keep the cucumbers crisp and crunchy.
It’s great on its own as a side or light appetizer, or you can make it a full meal by mixing it into a grain bowl and/or adding a protein (like chicken, fish, or tofu).
