The Most Beautiful Sourdough Blueberry Cobbler

Ladies and gents, it’s time to dust off your Dutch oven.

Classic cobbler gets a sourdough twist in this mouth-watering recipe by @wellmadebykiley, and you’re going to want to make it asap.

Naturally sweetened, loaded with antioxidant-rich blueberries, and finished with a gut-friendly sourdough biscuit, this golden beauty is the ultimate feel-good dessert. And though it may sound intimidating, the recipe is quite approachable for bakers of all levels.

Sourdough Blueberry Cobbler

Recipe Type:Dessert
Serving Size:8-10
Prep Time:15–20 minutes
Cook Time: 45–60 minutes
Total Time:1 hour to 1 hour 20 minutes

Ingredients:

Blueberry Filling
4 cups fresh or frozen blueberries
1/4 cup maple syrup
1 tablespoon lemon juice
2 teaspoons vanilla extract
2 tablespoons cornstarch
Pinch of salt

Sourdough Cobbler Topping
1 cup all-purpose flour
1/4 cup quick-cooking oats (can substitute old-fashioned rolled oats)
1/2 cup + 2 tablespoons granulated sugar
1/2 cup + 2 tablespoons brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sourdough discard or unfed starter, room temperature*
10 tablespoons unsalted butter, melted
Granulated sugar, for topping (optional)
Vanilla ice cream, for serving (optional, but is it?)

Instructions:

1. Preheat oven to 350°F.
2. Lightly spray a 9″ pie dish or 8”x8″ baking dish with nonstick spray, and set aside.
3. In a large bowl, mix the blueberries, maple syrup, lemon juice, vanilla, cornstarch, and a pinch of salt.
4. Pour the blueberry mixture into the prepared baking dish.
5. In another large bowl, stir together the flour, oats, granulated sugar, brown sugar, baking powder, and salt.
6. Add the sourdough discard (or sour cream/yogurt + flour), and stir to combine.
7. Pour in the melted butter, and mix until the dough comes together.
8. Scoop spoonfuls of the topping over the blueberries, leaving small gaps between each scoop.
9. Sprinkle the top with extra granulated sugar (optional).
10. Place a baking sheet on the oven rack below your dish to catch any drips.
11. Bake for 45 to 50 minutes for a gooey cobbler, or 50 to 60 minutes for a set, golden topping.
12. Let cool for 10 to 15 minutes.
13.Serve warm with vanilla ice cream and enjoy.
