A healthy breakfast option that’s also skin-boosting? Say no more, we’re in. We teamed up with Nikki Elisheva of My Sweet Belly to share her recipe for an anti-inflammatory, anti-aging smoothie bowl. It’s enriched with fresh fruit, plant-based milk, spinach, and superfood pearl powder for skin-enhancing perks. “The combination of blueberries and pearl powder not only acts as an anti-inflammatory but is linked with improving cognitive function and strengthening the connective tissue in our skin, hair, and nails,” Nikki explains. Read on for the step-by-step gluten-free, dairy-free recipe that includes only eight ingredients (not counting your choice of toppings) and two simple steps.
Skin-Boosting Breakfast Smoothie Bowl
Recipe Type:Breakfast/Lunch
Dietary Info:Gluten Free, Dairy Free, Can Be Nut-Free
Serving Size:1
Ingredients:
– 1/2 cup plant-based milk
– 1 cup frozen blueberries OR 3/4 cup frozen blueberries + 1/4 cup frozen peaches
– 1/2 frozen banana OR 1/2 cup frozen cauliflower rice, adjust according to appetite (it’s flavorless but adds to the creaminess)
– 1 handful spinach, frozen
– 1/4 teaspoon pearl powder (omit for vegans)
– Vanilla and cinnamon, to taste
Instructions:
1. Add liquid and powder ingredients (if adding protein powder, vanilla pea protein is a good flavor) to blender first, followed by the frozen ingredients.
2. Blend until smooth and creamy.
*Freezing the milk into ice cubes the night before will make the smoothie more ice cream-like in consistency.
Topping ideas:
– Chia seeds (to keep you fuller longer)
– Fresh chopped fruits
– Flax seeds (extra fiber)
– Sprouted pumpkin or sunflower seeds (sprouted is easier on the digestive system and will ensure clearer skin long-term)
– Tahini/date syrup/peanut butter
