How to Make Sea Bass in 15 Minutes

Cooking fresh fish can be intimidating AF, but once you get the steps down and few trials under your belt, you won’t even need to Google the instructions. Take it from our editor, Michelle Scanga, who recently mastered how to cook sea bass in a cast-iron skillet. “OK, I have to give credit to my friend, Deven. She taught me this recipe and walked me through each step while we were roommates, but since I’ve made it several times now, I pretty much have the recipe memorized. I know what to buy at the store, how to prep the delicate seafood, and most importantly how to make it perfectly crispy and delicious,” she shares.

It’s an impressive dish (that’s actually quite simple) and makes for a healthy dinner or lunch option. Consider this your beginner’s guide to cooking sea bass.

Simple Sea Bass

Total Time15 mins

Ingredients:

Sea bass fillet
EVOO
Lemon
Salt
Pepper
Avocado

Sides optional:
A handful of cherry tomatoes
Bag of organic spinach

Instructions:

1. Preheat the oven to 375 degrees F.
2. Dry fish very well.
3. Season with salt and pepper.
4. Heat oil in a cast-iron skillet—just enough to cover the fish. Oil should be HOT (you should be able to see the steam).
5. Cook for 2 mins. Add 30-60 seconds if the fillet is thick. **If fish is skin on, cook skin side UP. Do not touch fish. Do NOT move.
6. Immediately place in preheated oven for 8 mins. Add 30-60 seconds if the fillet is thick.
7. Remove, use a spatula to split in two (if needed), FLIP when serving so the seared side is facing up on the plate. (Makes for a prettier presentation.)
8. Squeeze lemon on top and sliced avocado on the side.

Sides optional:
While your fish is in the oven, blister a handful of tomatoes on the stove using a drizzle of EVOO.
When there are about 2 minutes left to cook, drop in the spinach on the stove, which will cook immediately, and just like that your fresh, homecooked meal is timed perfectly.
