This version gets a nutritious boost thanks to chia seeds and Greek yogurt, while still keeping the chewy, creamy texture that made the trend popular in the first place. Strawberry Chia Protein Mochi

Ingredients
2 rice paper sheets
1/2 cup 0% Greek yogurt
1 tablespoon natural sweetener, such as agave or honey
1 tablespoon chia seeds
1 tablespoon freeze-dried strawberries, crushed into a powder
8 strawberries, 4 diced and 4 thinly sliced
Optional: 2 tablespoons cornstarch, for rolling
Directions
1. In a bowl, combine the Greek yogurt, chia seeds, sweetener, and freeze-dried strawberry powder. Mix until fully combined. Fold in the diced strawberries.
2. Gently dip each rice paper sheet into warm water for about 10 to 15 seconds, or until softened.
3. Place one softened rice paper sheet over a small bowl. Add 2 thinly sliced strawberries to the center, then spoon half of the yogurt mixture on top. Fold the edges of the rice paper together to form a ball. Remove from the bowl and place on a plate. Repeat with the second rice paper sheet using the remaining sliced strawberries and yogurt mixture.
4. Place on a freezer-friendly plate and freeze for at least 1 hour, or until firm.
5. Remove from the freezer, roll in cornstarch if desired, and enjoy!

Optional: 2 tablespoons cornstarch, for rolling
Directions
1. In a bowl, combine the Greek yogurt, chia seeds, and sweetener. Mix until fully combined. Fold in the diced peach.
2. Gently dip each rice paper sheet into warm water for about 10 to 15 seconds, or until softened.
3. Place one softened rice paper sheet over a small bowl. Add half of the thinly sliced peach pieces to the center, then spoon half of the yogurt mixture on top. Fold the edges of the rice paper together to form a ball. Remove from the bowl and place on a plate. Repeat with the second rice paper sheet using the remaining sliced peach and yogurt mixture.
