We all saw the TikTok. The vegan green goddess salad recipe that Melissa Ben-Ishay created and that instantly went viral. Since it looked so delicious, we had to put a Poosh spin on it by adding pears (or apples) for an extra crunch and cayenne pepper for added flavor.
The healthy salad is perfect for both lunch and dinner. So try it the next time you want a light but filling meal or snack. Poosh's Version of The Green Goddess Cabbage Salad

Ingredients:
For the salad:
1 small head of cabbage or iceberg lettuce, shredded
2 large cucumbers, diced
1/4 cup chives
1 bundle of green onions or scallions
2 crisp pears or apples, diced *for the Poosh touch
For the dressing:
Juice of 2 lemons
1/4 cup olive oil
2 tablespoons nuts of choice (walnuts or cashews are recommended)
1 cup fresh basil
1 cup fresh spinach
2 tablespoons rice vinegar
2 garlic cloves
1 shallot
1/3 cup nutritional yeast
1/3 cup chives
Salt to taste
Dash of cayenne pepper *for the Poosh touch
Instructions:
1. Finely chop the cabbage, cucumber, pears (or apples), chives, and green onion and add to a large salad bowl.
2. In a blender, add the lemon juice, olive oil, and rice vinegar, followed by the remaining dry ingredients and seasoning.
3. Blend until a smooth dressing forms.
4. Dress the salad. Mix so it is coated to perfection.
5. Serve with gluten-free tostadas.
