If you tuned in to our Poosh Your Wellness festival, then you got a sneak peek at today’s bites, all made with some of our favorite plant-based milks from Elmhurst®. For the event, Kourt’s good friend and no-fuss recipe master, Virginia Nazari, shared three easy ways to incorporate their delicious dairy-free milks into your daily routine.

Elmhurst is Poosh-approved because they’re a clean, plant-based company that delivers simpler, better nutrition in everything they do. Chocolate Peanut Butter Banana Smoothie

Ingredients:

1 ⅓ cup Elmhurst® Chocolate Milked Oats™️
1 tablespoon peanut butter
2 bananas (frozen and sliced)
Top with vegan chocolate chips + desired toppings
1 cup protein powder of choice

Instructions:

1. Place everything into a blender and blend until smooth and creamy.
2. Add your favorite toppings. Virginia topped hers with some extra chocolate chips and coconut flakes.
3. Enjoy!

Brownie Batter Chia Pudding

Recipe Type:Snack

Serving Size:1 jar
Prep Time:5 mins
Cook Time:3 hours (or overnight)
Total Time:3 hours 5 mins
Ingredients:

1 cup Elmhurst® Chocolate Milked Oats™️
3 tablespoons chia seeds
1 tablespoon nut butter
¼ cup vegan chocolate chips
Pinch of salt

Instructions:

1. Combine all your ingredients in a jar or container and stir well to avoid the chia seeds clumping together.
2. Cover and let sit in the refrigerator for a few hours, or overnight.
3. Stir again and top with extra chocolate or nuts.
4. Enjoy!

No-Bake Chocolate Oatmeal Cookies

Recipe Type:Snack/Dessert

Serving Size:30 cookies
Prep Time:6 mins
Cook Time:4 mins
Total Time:10 mins
Ingredients:

1 cup Elmhurst® Unsweetened Milked Cashews™️
2 1/2 cups granulated sugar
3/4 cup vegan butter
1/4 cup cocoa powder
6 cups quick oats
2 tablespoons vanilla extract
1 cup peanut butter, smooth

Instructions:

1. Line a baking sheet with parchment and set aside.
2. Measure out all of your ingredients. These cookies come together very quickly, so you’ll want everything ready.
3. In a medium pot, combine Elmhurst Cashew Milk, sugar, vegan butter, and cocoa powder. Bring to a slight boil for 3-4 minutes, stirring occasionally.
4. Remove the pan from heat and add the peanut butter and vanilla extract. Mix until smooth. Add the oats and stir until well incorporated.
5. Once combined, use a tablespoon to portion out your cookies on the lined baking sheet and gently press into shape. Chill to set.
6. Enjoy!
