For a cozy, must-try meal during cold weather, we can’t get enough of Pamela Anderson’s anti-inflammatory lentil soup.
Now, we’re digging into another gem from her brand-new cookbook, I Love You: Recipes from the Heart. Pamela said that what started out as a gift for her sons turned into a collection of recipes celebrating her love for plant-based, globally inspired dishes.
Pamela shared her own twist on a classic family favorite recipe: a French potato salad. Loaded with fresh parsley, dill, and tarragon, it’s a bright, earthy, and deliciously elevated side dish, perfect for any fall gathering.

Pamela Anderson’s Herby French Potato Salad

Ingredients:
8 small red potatoes (2 3/4 pounds/1.3 kg total)
1/4 cup (55 g) plant mayonnaise
2 tablespoons Dijon mustard (page 237 or store-bought)
1/2 teaspoon freshly ground black pepper
1/4 teaspoon fine sea salt
1 teaspoon garlic powder (optional)
2 tablespoons apple cider vinegar
2/3 cup (65 g) chopped or sliced celery (from 1 small stalk)
2 green onions, thinly sliced
1/4 cup (40 g) finely chopped or sliced pickles (from 1 small pickle)
1/4 cup (5 g) flat-leaf parsley, finely chopped
1/4 cup (5 g) dill, finely chopped
1 tablespoon finely chopped tarragon
Instructions:
1. Cut the potatoes in half lengthwise, and place in a medium saucepan.
2. Cover with water, and bring to a boil over high heat.
3. When the water is bubbling, lower the heat to a simmer, and cook the potatoes until fork-tender, 10 to 15 minutes.
4. While the potatoes are cooking, make the dressing by combining the plant mayonnaise, mustard, pepper, salt, and garlic powder (if using) in a small bowl. Mix well.
5. Drain the potatoes, and let them cool for a few minutes before cutting into bite-size pieces. Place them in a medium bowl, add the vinegar, and toss to coat.
6. Mix in the celery, green onions, pickles, parsley, dill, tarragon, and dressing.
7. Chill for at least 30 minutes in the fridge. Then, serve and enjoy!
