How to Make Overnight Oats

Simplify your busy mornings with this easy recipe that can last up to a week in the fridge. The oats soak overnight in liquid (in this case, coconut milk), and they absorb the liquid, becoming soft and creamy. If you ask me, there is nothing better than eating the nutritious oats every morning. They are rich in fiber, they are loaded with vitamin B, and they keep the heart healthy. Start your day with this tasty (and filling) meal that’s good for your gut, heart, and brain. Read on for the step-by-step instructions.

Overnight Oats

Prep Time10 minutes; place in fridge overnight
Total Time12 hours to store in fridge until ready

Ingredients:

2 cups gluten-free rolled oats
1-1.5 cups unsweetened coconut milk
1 ripe banana
2 tablespoons chia seeds
2 teaspoons vanilla
1 teaspoon cinnamon
3 tablespoons chopped walnuts (optional)
1 tablespoon cacao nibs

Instructions:

1. Add the rolled oats and coconut milk to a storage container and stir.
2. Add banana and mash well into the oat mixture.
3. Add all other ingredients, except cacao nibs, and mix well.
4. Seal storage container and store in refrigerator overnight.
5. Remove from fridge after 10-12 hours and sprinkle cacao nibs.
6. Add any fruit toppings.
