MATCHA Protein Bites

Get ready for a par-tea in your mouth—these matcha protein bites are so delicious, it’s almost hard to believe that they’re also good for you. After seeing a tray of these truffle-looking balls on Kourtney’s counter, naturally we had to find out a) what they were and b) how to make them. So we spoke with Chef K and she graciously gave us her exact recipe.

The bites are easy to make, and serve up protein and healthy fats with a blend of almond butter and almond flour. They’re lightly sweetened with a touch of maple syrup, and coated with matcha chocolate. Seriously, the mix of textures and flavors is u n r e a l. Ready for your new midday pick-me-up? Chef K's Matcha Protein Bites

Recipe Type:Snack
Dietary Info:Gluten-free, Vegan
Serving Size:8-12 servings
Prep Time:25 min
Total Time:1 hour

Ingredients:

1/2 cup almond butter 
2 tbsp maple syrup
1/4 cup almond flour
1 matcha chocolate bar (melted)

Instructions:

1. Mix nut butter, maple syrup, almond flour in a bowl until well incorporated. 
2. Roll the dough out in small balls.
3. Freeze the dough balls for 20 minutes.
5. Place a pot of water over a medium heat and bring to a very gentle simmer. Place a heatproof bowl on top of the pan so that it fits snuggly but doesn’t touch the water. Break up the matcha chocolate and add to the bowl, then leave to melt for 4-5 mins, stirring regularly.
6. Coat the dough balls in melted chocolate and drizzle with more chocolate.  
7. Put dough balls back in the freezer for matcha chocolate to set. 
8. Enjoy!
