Kris Jenner’s Sweet Potato Soufflé

There are Thanksgiving dishes…and then there are Kris Jenner Thanksgiving dishes, which never make it to leftovers because everyone is “just having a small scoop” five times. This sweet potato soufflé is one of her most-loved family recipes: warm, fall-spiced, and surprisingly simple to make. With optional vegan swaps and clean, organic ingredients, it’s a Poosh-approved must-make for any Thanksgiving table (or Friendsgiving spread).

Sweet Potato Soufflé

Ingredients

6 large organic sweet potatoes
2 sticks vegan butter, melted
1/2 box organic brown sugar
2 cups organic sugar
6 organic eggs, beaten
(Vegan swap: 3 tbsp chickpea flour + 3 tbsp water per egg)
1 can sweetened organic condensed milk
(Vegan swap: organic coconut condensed milk)
1 tsp organic vanilla extract
1 tsp organic cinnamon
1 tsp organic nutmeg

Instructions

1. Preheat the oven to 375°F.
2. Cut sweet potatoes into quarters.
3. Boil for 20 minutes, or until soft.
4. Peel and mash until completely smooth.
5. Add the melted vegan butter.
6. Add all remaining ingredients except the eggs or chickpea flour mixture.
7. Add the eggs (or vegan substitute) once everything else is mixed.
8. Pour into a soufflé dish.
9. Bake for 1 hour.
10. Serve warm and enjoy!
