KOURT'S FAVORITE Seed Crackers Recipe

Pooshie want a cracker?

Sometimes you need a little crunch in your life. A vessel for sauces, dips, sauerkraut. Crackers don’t always offer the most nutritional value and oftentimes add empty carbs to our meals, spiking blood sugar and disrupting your energy.

But wait!

Say hello to these seed crackers Kourtney has been making and putting with everything. Her favorite? Crumbled into this delicious ayurvedic asparagus soup—which just so happens to be our new favorite lunch for this chilly spring season.

Another perk? These crackers are absolutely loaded with beneficial fiber to keep things moving and grooving.

Kourt’s Favorite Seed Crackers Recipe

Recipe Type:Snack
Dietary Info:Vegan, Gluten-free
Serving Size:6 (or save it all for yourself!)
Prep Time:10 minutes
Cook Time:40-60 minutes
Total Time:50 minutes to 1 hr and 10 minutes

Ingredients:

1 cup organic sprouted pumpkin seeds 
1/3 cup sprouted sunflower seeds
1 cup whole flax seeds (pro-tip, keep these oil-rich babies in the fridge for freshness)
1/3 cup sesame seeds
2 tablespoons psyllium husk or you can substitute with ground flax 
1 ½  cups boiling water
1 teaspoon salt

Instructions:

1. Preheat the oven to 315 degrees.
2. Prep baking sheet with parchment paper.
3. Mix all dry ingredients in a bowl.
4. Pour in boiling water, and mix until fully combined using a rubber spatula.
5. Spread evenly on the baking sheet into as thin a layer as possible, avoiding holes.
6. Top with everything bagel seasoning, or even furikake. Feel free to get creative for flavor and added nutritional value.
7. Bake for 40 to 60 minutes until crispy! 
8. Let cool for an hour because it will be gummy when it first comes out—then break apart into shards. The look here is not perfection.
9. Store in an airtight container and enjoy!
