If a meal takes 15 minutes or less to prep, we’ll chalk that up as a win in our book. Especially when it comes to lunch options. Let us introduce you to Kourt’s signature salad that contains five ingredients (not including salt and pepper, which you can add to your liking). The simple combination of hard-boiled eggs, avocado, tomatoes, and mozzarella make for a healthy and filling dish. Kourt skips the cheese since she’s dairy-free, but we suggest adding it in if you’re a dairy eater. Since the low-carb meal contains healthy fats and fibers (thanks to avocado and eggs), you’ll feel full longer throughout the day. We promise you won’t regret adding this tasty recipe to your lunch rotation. Scroll down for step-by-step instructions.

Kourt’s Signature Salad

INGREDIENTS

2 hard-boiled eggs (quartered)
½ avocado (sliced)
1 hothouse tomato
2 fresh mozzarella balls
olive oil
sea salt
pepper

INSTRUCTIONS

Start by placing the eggs in a pot with cold water, and cover.
Bring the pot to a boil over medium-high heat, and again cover.
Remove from heat and set aside for 8 to 10 minutes.
Drain, cool in ice water and peel.
Slice the avocado as thinly as you can. Chop the tomato and put aside.
Slice mozzarella balls into quarters, you can chop into cubes too.
Once the eggs have cooled, quarter them and put into bowl, adding in the avocado, tomato, and mozzarella.
Drizzle olive oil and add a dash of salt and pepper.
Mix thoroughly and enjoy.
