KOURTNEY’S GO-TO Ayurvedic Asparagus Soup Recipe

ICYMI, Kourtney is a big fan of Ayurveda— a form of healing that centers around restoring balance to the body and mind using foods and spices. According to this Vedic way of life, we all reside inside bodies that are affiliated with a specific disposition, known as our dosha.

There are 3 kinds of doshas— vata, pitta, and kapha, in which our bodies and temperaments are defined by for personal reference to maintain our best balance. Of course, we can be more than one, and we can change throughout life— take a quiz and find out which resonates with you!

This particular fresh and light, healing soup is excellent for managing a vata dosha, as well as cooling the fiery pitta dosha associated with stress, feeling tired or “burnt out,” and is great for balancing the reproductive system. It’s super simple and refreshing. Find Kourt’s recipe she keeps on rotation below:

Kourtney's Asparagus Soup

Cook Time:15 min
Total Time:20 min

Ingredients:

1 bunch of asparagus, ends removed
1-2 teaspoons of coconut oil
Sea salt
Fresh ground pepper
½ bunch cilantro
1 teaspoon of Bragg Liquid Aminos
1 teaspoon of shredded coconut
3 cups of spring water or vegetable broth
Optional – one tablespoon of coconut butter

1. Wash and trim your asparagus, slicing them into 2-3” pieces for easy searing.
2. Melt coconut oil in a cast iron pot over medium heat.
3. Add sea salt and fresh ground black pepper to taste
4. Toss in your asparagus, half bunch of cilantro, liquid aminos, and shredded coconut. 
5. Cook all together until asparagus is just cooked— it should be bright green and still have some crispness to it.
6. Add your water and broth, and bring to a soft boil for about 5 minutes
7. At this point, for an extra creamy soup, add your tablespoon of coconut butter.
8. Remove from heat, and add all ingredients to a high-speed blender. Start slow, then blend at full speed for a minute or two, until everything is creamy and incorporated. Enjoy alone, or as a side or snack. Total yum.
