Ingredients:
-1 head of cauliflower, cut into florets
-2 tablespoons butter or butter alternative (like this soy-free one from Earth Balance)
-1 cup heavy cream
-1 cup white cheddar vegan cheese
-1/2-1 teaspoon salt
-1/2 teaspoon pepper
-3 green onions, chopped
-3-4 strips of bacon, crumbled
Instructions:
1. Boil or steam the cauliflower florets until they are soft. I usually poke mine with a fork until the fork runs smoothly through them.
2. Drain the cauliflower and put it back in the pot on low. Add the butter and heavy cream. At this point, you can mix with a handheld blender for a smoother consistency or mash it yourself for a thicker, chunkier consistency.
3. Remove from heat and mix in the cheese, salt, and pepper.
4. Once the cheese is melted, you can add the green onions and bacon. I always save some for the top.
