How to Make VEGAN BLUEBERRY ENERGY BALLS

We got that blueberry (muffin) yum yum, and we never would have thought that it would taste this good. Nikki Baumel of My Sweet Belly has made a healthy, energy-boosting recipe that’s got us singing melodies while we snack on the delicious bites. 

“Blueberries are considered one of the best foods to boost your brain health. Being high in antioxidants, they allow your body to curb inflammation and oxidative stress in your noggin. Plus, they are packed with fuel to boost energy. A rule of thumb is that the bluer the berry, the more nutrient-dense it is,” Nikki shares. Read on to get the recipe for your newest snack to curb that next afternoon lull. Read on for the step-by-step instructions.

Blueberry Muffin Energy Bites

Recipe Type:Breakfast/Snack
Dietary Info:Gluten-free, Vegan, Keto
Serving Size:8-10
Prep Time:10 mins
Cook Time:4-6 hours or overnight
Total Time:4-6 hours or overnight

Ingredients: 

1 cup cashews
1 cup walnuts 
Zest from a lemon 
1 teaspoon vanilla extract 
6-7 large dates (pitted) 
3/4 cup organic frozen blueberries 

Instructions: 

1. Add all ingredients to a blender or food processor until fully combined.
2. Place blueberry muffin mix on a parchment-lined tray and roll into tablespoon-size balls (using the palms of your hands). 
Note: If mix is too wet, add more nuts. If mix is too dry, add more dates.
3. Place in the fridge overnight or for 4-6 hours. 
4. Enjoy!
