Strawberry Shortcake

Ingredients:
2 eggs separated
2 egg yolks
1 cup sugar
1/2 cup melted butter (cooled)
Pinch of salt
1 teaspoon vanilla
1 cup buttermilk
1 cup cake flour (55 grams)
1/2 teaspoon vinegar
2 teaspoons baking powder
Meringue Ingredients:
2 egg whites
Pinch of salt
1/4 cup sugar
1 teaspoon vanilla
Filing Ingredients:
4 cups heavy cream
1/3 cup sugar
Instructions:
1. In a mixing bowl, add the egg yolks.
2. Add a pinch of salt and mix.
3. Add sugar while mixing and then add vinegar.
4. In a different bowl, sift the flour.
5. While mixing, alternate adding melted butter, flour, and buttermilk.
6. With a spatula, scrape down the bowl and make sure it’s all well mixed.
For Meringue
1. Add the egg whites with a pinch of salt into the mixing bowl.
2. Add the sugar and vanilla, and mix until it’s thick.
3. Add a scoop of the meringue into the batter and fold.
4. Continue until all the meringue is folded into the batter.
5. Add paper in the bottom of the baking pans.
6. Pour batter into pans. Make sure each pan has the same amount of batter. (You can weigh the pans if you want to make sure they are all the same.)
7. Bake at 350° F for about 45 minutes.
For Filling
1. In a mixing bowl, pour the heavy cream and sugar and mix until it turns into whipped cream.
2. Cut the strawberries (make sure they are the same diameter and size).
To Assemble:
1. Use a cake turntable and place a cake board on it.
2. Add a bit of whipped cream to the cake board and place one of the cakes on it.
3. Cover the top of the cake with whipped cream evenly.
4. Layer the strawberries on top.
5. Add a dollop of whipped cream on top of the strawberries.
6. Place the other cake on top.
7. Cover the whole cake with whipped cream.
8. Garnish the top with strawberries and enjoy!
