HORMONE HEALTHY Raw Carrot Salad Recipe

We feel like carrots are having a moment. Baked or glazed, roasted or raw, these vibrant little root veggies are a powerhouse, and we refuse to sleep on them. 

Not only are they high in antioxidants like carotenoids, which are great for eye sight, UV damage, and overall skin health, but raw carrots have been found to help prevent the reabsorption of estrogen in the intestine. This helps the liver operate more functionally in terms of regulating our metabolism. 

When combined with coconut oil, the unsaturated fat in the carrot is balanced. It also helps to stimulate the metabolism while reducing bacterial overgrowth. That’s one powerful collab. Get the recipe below.

Hormone Healthy Raw Carrot Salad Recipe

Ingredients: 

For the salad:
1-2 large, raw organic carrots, peeled 
½ bunch fresh organic cilantro, leaves and tender stems
1 tablespoon toasted sesame seeds
For the dressing:
2 tablespoons apple cider vinegar
1 tablespoon lime or lemon juice
1 tablespoon raw honey
½ teaspoon Himalayan salt
2-3 tablespoons coconut oil, melted

Instructions:

1. Whisk all dressing ingredients together until emulsified, set aside.

2. Ribbon your peeled carrots using the same tool used for peeling. 

(Optional: You can give your carrot ribbons an ice bath to get some pretty, curly tendrils, but that’s just for aesthetics. Hehe.)

3. Wash and roughly chop your cilantro.

4. Toss cilantro with your carrot ribbons and dressing, and top with the toasted sesame seeds. 

(Optional: Add flaky salt on top to taste.)
