Warm Harvest Quinoa Salad

If salads are your go-to lunch during the week, you’re going to love this warm quinoa recipe, especially when the temperature drops. 

One of our favorite content creators, Cheryl, makes this healthy salad with seasonal ingredients like butternut squash, pumpkin seeds, apple, and pomegranate. The dressing recipe alone is worth memorizing (with a bit of cinnamon and maple syrup) if you plan to up your salad greens this month.

Warm Harvest Quinoa Salad

Recipe Type:Lunch

Total Time:35 minutes

Ingredients:

Salad
1 1/2 cups of roasted butternut squash (see instructions below)
1 bunch kale, chopped
2 cups of cooked quinoa (made with 1/2 cup dry)
1 can of chickpeas, drained and rinsed
1 apple, chopped
1/2 cup pomegranate seeds
1/2 cup crumbled goat cheese
1/2 cup toasted pumpkin seeds

Dressing
1/3 cup olive oil
3 tablespoons apple cider vinegar
2 tablespoons tahini
1 tablespoon maple syrup
1 tablespoon chopped shallot
1 teaspoon Dijon mustard
1 lemon, juiced
1/4 teaspoon cinnamon

Instructions:

1. Preheat the oven to 400° F.
2. Roast butternut squash cubes with two tablespoons olive oil and pink salt for 25 to 30 minutes, stirring halfway through.
3. Cook 1/2 cup of dry quinoa to package directions. 
4. Rinse your chickpeas, and add some olive oil, sumac, dried rosemary, and thyme. 
5. Massage the kale with olive oil and salt for two minutes, and put in a large salad bowl. 
6. Add all the other ingredients when they are ready. 
7. Prepare the dressing by whisking all the ingredients in a glass container.
8. Pour the dressing over the salad ingredients, and toss until all the yummy goodness is mixed.
9. Enjoy!

(This salad keeps well in the fridge for three to four days, but it will be gone long before then.)
