High-Protein Whipped Ricotta Crostini

Not to be dramatic, but these High Protein Whipped Ricotta Crostini from @talulaskitchen might just earn you a standing ovation at your next brunch.

Not only are these bites delicious, they pack a nutritional punch:

  • Ricotta is high in calcium, vitamin C, and protein
  • Blackberries are an amazing source of antioxidants and fiber (plus, they’re currently in-season)
  • Honey has natural antibacterial properties and antioxidants.
  • Thyme offers antimicrobial, anti-inflammatory, and antioxidant benefits

Even better? This is a make-ahead brunch recipe dream. Bake the crostini up to three days in advance and store in an airtight container, then whip the ricotta the night before and stash it in a piping bag. Assembly takes minutes, leaving you free to pour mimosas and accept compliments.

Whipped Ricotta Crostini

Recipe Type:Snack, Dessert
Serving Size:4-6
Prep Time:10- 15 mins
Cook Time:10-12 mins
Total Time:20-27 mins

Ingredients:

1 small baguette (or ½ large baguette)
15 ounces ricotta (1 container)
¼ cup honey, plus 3–4 tablespoons for drizzling
1 pack blackberries, sliced lengthwise
A few sprigs of fresh thyme, leaves removed
Olive oil, for drizzling

Instructions:

Crostini
1. Preheat your oven to 400°F (200°C).
2. Slice the baguette to your desired thickness and arrange the slices on a parchment-lined baking sheet.
3. Lightly drizzle both sides with olive oil.
4. Bake for 10–12 minutes, until crisp and golden.
5. Transfer to a wire rack to cool slightly before topping.

Whipped ricotta
1. While the bread is baking, combine the ricotta and ¼ cup honey in a blender or food processor. Blend briefly until smooth and creamy. Alternatively, whip by hand with a whisk or use a stand mixer with the whisk attachment.
2. Transfer the mixture to a piping bag and refrigerate until ready to use.

Toppings
1. Slice the blackberries lengthwise and remove the thyme leaves from the stems. Set aside.

Assembly
1. Once the toasts are cool, pipe (or spread) the whipped ricotta onto each slice.
2. Top with sliced blackberries and sprinkle with fresh thyme leaves.
3. Drizzle with the remaining honey just before serving. (Pro tip: 4. When drizzling honey, place parchment paper or a tray underneath to catch any mess.)
