Morning Matcha Cake

Ingredients:
For the Matcha Cake:
– 1/2 cup coconut flour
– 1/2 cup King Arthur gluten-free baking flour (a blend of cassava, fava, and garbanzo bean flour)
– 1/2 cup monk fruit sugar
– 1/2 cup monk fruit maple syrup (can use regular maple syrup)
– 1 heaping tablespoon matcha powder
– dash of cinnamon
– 2/3 cup almond milk, unsweetened
– 1 teaspoon vanilla
– 3 tablespoons tahini
– 1 tablespoon lion’s mane (optional)
– 1/2 teaspoon baking soda
– 1/2 teaspoon baking powder
– 1-2 tablespoons cacao nibs/chocolate chips
*for a nut-free version, substitute almond milk for your choice milk
For the Frosting:
– Coconut manna (coconut butter)
– Monk fruit sugar
– Cinnamon, to taste
– Monk fruit maple syrup
Instructions:
For the Matcha Cake:
1. Mix all ingredients together in a food processor. (You can manually stir ingredients, but a food processor seems to combine the ingredients best.)
2. Pour batter into a small, parchment-lined tray.
3. Bake cake at 350 degrees F until golden brown around the edges (about 30 minutes).
4. Allow the cake to cool before preparing the frosting.
For the Frosting:
1. Melt the coconut manna and stir in the rest of the ingredients until desired level of sweetness.
2. Spread over matcha cake and enjoy!
Sweet tip: If your batter is too liquidy, add more coconut flour. If your batter is too thick, add more maple syrup and milk. Taste test as you go.
