Fudgy, rich, and packed with hidden nutrients (hello, zucchini!), this loaf from Rachael Harlington and Olivia Adriance is a better-for-you dessert done right. It’s also gluten-free, dairy-free, and naturally sweetened with honey, making it a yummy option that fits into a variety of diets.

Double Chocolate Zucchini Bread

Ingredients:

2 1/2 cups zucchini, chopped
1 cup gluten-free flour blend
2 pasture-raised eggs
1/3 cup cacao powder
1/3 cup creamy peanut butter
1/3 cup applesauce
1/4 cup honey (or sub maple syrup)
1 teaspoon vanilla
1 teaspoon cinnamon
2 teaspoon baking soda
1/4 teaspoon sea salt
3/4 cup dairy-free chocolate chunks

Instructions:

1. Preheat your oven to 350° F.
2. Prepare a loaf pan by spraying it with avocado oil or lining it with parchment paper.
3. Add your zucchini to a blender, and blend until minced.
4. Add the remaining ingredients, except for the chocolate chunks, to the blender, and blend until just combined.
5. Stir in the chocolate chunks.
6. Pour the batter into the prepared loaf pan.
7. Bake for 40 to 45 minutes. (It’s done if you poke a toothpick in, and it comes out clean.)
8. Remove from the oven, and let cool before slicing.
9. Enjoy!
