Crispy Lemon Parmesan Potatoes

Crispy edges, bright lemon, lots of Parmesan, and minimal cleanup: these potatoes are very easy to crave (and are even easier to make). Serve these potatoes as a side, appetizer, or straight from the tray standing in the kitchen. No judgement. Scroll down for the full recipe.

Crispy Lemon Parmesan Potatoes

Ingredients:

1 cup finely grated Parmesan cheese
Juice of 2 lemons + zest of 1 lemon
1 lb fingerling potatoes
3 tablespoons extra virgin olive oil
1½ teaspoons dried oregano
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper

Optional Toppings:

Additional finely grated Parmesan
Extra lemon zest
Finely chopped parsley

Directions:

1. Preheat the oven to 375°F (190°C).
2. In a small bowl, combine the finely grated Parmesan with the lemon zest. Use your fingertips to gently rub the zest into the cheese to infuse it with flavor.
3. Wash, dry, and slice the fingerling potatoes in half.
4. Place the potatoes on an unlined baking tray. Drizzle with olive oil and lemon juice, then sprinkle with oregano, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
5. Spread the potatoes cut-side down and sprinkle with half of the lemon Parmesan mixture.
6. Bake for 15 minutes, then remove from the oven and toss. Sprinkle with the remaining lemon Parmesan mixture.
7. Return to the oven and bake for another 15 minutes, or until crispy and golden brown.
8. Serve topped with additional Parmesan, lemon zest, and chopped parsley. Serve with a dipping sauce, if desired.
