CREAMY Matcha Chia Seed Pudding

You can never have too many simple, easy, versatile recipes in your arsenal. Whether you’re looking for a filling breakfast, a grab-and-go snack, or even a late-night treat, this Matcha Chia Pudding is one you’ll want to bookmark. Thanks to the chia seeds and matcha, this creamy pudding is packed with antioxidants, making it as healthy as it is delectable. You can personalize it by adding your favorite toppings (we’re partial to raspberries, kiwis, and almonds, but do you).

Creamy Matcha Chia Seed Pudding

Recipe Type:Breakfast, Snack
Dietary Info:Vegan
Serving Size:1 serving
Prep Time:10 min
Cook Time:Set for at least two hours
Total Time:2 hr 10 min

Ingredients

2 teaspoons organic ceremonial matcha powder
1 cup non-dairy milk of choice, we like Malk or canned coconut milk
¼ cup chia seeds
½ tablespoon maple syrup or monkfruit sweetener
Topping ideas: raspberries, kiwi slices, hemp seeds, cacao nibs, goji berries, almonds, toasted sesame seeds, shredded coconut

Instructions:

1. In a blender, pulse the matcha and milk until fully combined.
2. Alternatively, add the matcha and milk to a wide bowl and mix with your matcha whisk until no clumps remain.
3. Add the chia seeds and your sweetener of choice, Make sure it’s mixed evenly, so no clumps of chia seeds are stuck together.
4. Place in the fridge for two hours or overnight to set into a pudding consistency.
5. Top with your fresh fruit and goodies of choice!
