GUILT-FREE Coconut Yogurt Bark

We don’t like insinuating that anyone should feel “guilty” when they crave a little something sweet, whether that’s a midday snack or an after-dinner treat. However, with the holidays upon us, so are the moments of overindulgence and high stress, paired with lower immunity—not to mention wanting to fit into our favorite LBD for that festive cocktail hour. 

This super easy little treat is easy to make and easy to digest. It’s full of nutrients and healthy energy to power you through the season (and beyond), with room for those cookies or that extra glass of wine to spare. Our very own Sam Hyatt makes this for herself and her kids often; find her recipe below.

Guilt-Free Coconut Yogurt Bark

Recipe Type:Snack or Treat
Dietary Info:Gluten-free, Dairy-free
Serving Size:5-7
Prep Time:10 minutes
Cook Time:1 hour
Total Time:1 hour, 10 minutes

Ingredients:

1 1-pound container Cocojune Organic Vanilla and Chamomile Yogurt
½ cup organic frozen blueberries
½ cup Enjoy Life Mega Chunks
Few dashes cinnamon

Instructions:

1. Prep a baking sheet by lining it with parchment paper (choose a baking
sheet small enough to fit in your freezer).
2. Pour the coconut yogurt onto the pan and evenly spread it out with a spoon so that
it is approximately ¼-inch thick all over.
3. Sprinkle cinnamon over the yogurt and swirl it in with a knife or spoon.
4. Scatter blueberries over half the yogurt.
5. Scatter chocolate chunks over the other half of the yogurt.
6. Freeze for two hours, then remove and use a knife to break up the frozen yogurt mixture into chunks of bark.
7. Enjoy, and store in an airtight container in the freezer for up to two weeks.
