The free-from cake that tastes anything but. This tasty Cinnamon Roll Date Cake from @caitlinjesson is gluten-free and dairy-free, yet somehow still gives you all the gooey, sticky-sweet comfort of a freshly baked cinnamon roll.  

Naturally sweetened with Medjool dates and topped with a light glaze, this cake hits the sweet spot: less refined sugar, but with the same warm caramel-cinnamon flavor. Olive oil keeps it tender and fluffy, while the drizzle adds that irresistible finishing touch. 

A super simple, one-bowl cake, this recipe is pure weekend morning energy. Serve it with a cup of chai or your favorite matcha latte in the name of self-care.

Tips and Substitutions

  • Swap the olive oil for coconut oil if you prefer a slightly richer flavor.
  • Add chopped pecans or walnuts for more crunch.
  • For extra gooey cinnamon layers, swirl half the cinnamon topping into the batter before baking.
  • The glaze can be made with powdered coconut sugar if you want to keep it naturally sweetened.

Ingredients

Cake:
12 Medjool dates, pitted
1 cup (220g) boiling water
3 large eggs
½ cup (150g) maple syrup
1 tsp (5g) vanilla extract
¼ cup (50g) olive oil
1 cup (170g) gluten-free all-purpose flour substitute
1 tsp (4g) baking powder
½ tsp (3g) baking soda
½ tsp (3g) salt
1 tsp (2g) cinnamon

Cinnamon Topping:
2 tsp (4g) cinnamon
½ cup (105g) coconut sugar
2 tbsp (24g) coconut oil, melted

Glaze:
1 cup (170g) powdered sugar
3 tbsp (40g) dairy-free milk of choice
¼ tsp (1g) vanilla extract

Instructions

1. Preheat the oven to 350°F. Grease a 9×9 baking dish.

2. In a small bowl, combine all cinnamon topping ingredients. Set aside.

3. Add chopped dates to a bowl with boiling water. Let sit for 10 minutes, then blend until smooth.

4. In a large bowl, whisk together the date paste, eggs, maple syrup, olive oil, and vanilla extract until smooth.

5. Fold in the flour, baking powder, baking soda, salt, and cinnamon until the batter is uniform.

6. Pour the batter into the baking dish and sprinkle the cinnamon mixture evenly over the top.

7. Bake for 35–45 minutes, until a toothpick inserted into the center comes out with just a few crumbs.

8. In a small bowl, whisk together the glaze ingredients. Drizzle generously over the warm cake.

9. Slice, serve, and prepare to become obsessed.
