Chopped Chicken Kale Caesar Sandwich

There are two types of lunches: the sad desk salad that makes you dread your lunch break, and the one that keeps you full, focused, and excited for the next bite.

Think classic chicken Caesar sandwich, but upgraded: chopped romaine and tender chicken meet buttery avocado and protein-packed chickpeas for a version that works a little harder. Toss it all in a tangy Caesar dressing with capers (no anchovies this time), Dijon, lemon, and Parmesan, and you’ve got the perfect mix of flavor, fiber, and fullness.

Chopped Kale Chicken Caesar Sandwich

Ingredients:

Kale Caesar Salad
2 grilled chicken breasts
1 bunch kale
1 bunch romaine
1 avocado
½ cup canned chickpeas, rinsed and drained
¼ cup grated Parmesan cheese
Faux Caesar Dressing
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
½ lemon, juiced
1½ teaspoons Dijon mustard
2 teaspoons capers, finely chopped
¼ cup olive oil
2 tablespoons grated Parmesan cheese
1 garlic clove, peeled and smashed
Salt and pepper, to taste
Additional
Bread of choice

Instructions:

1. In a small bowl, whisk together the mayonnaise, Worcestershire sauce, lemon juice, Dijon mustard, capers, Parmesan cheese, and garlic.
2. Slowly stream in the olive oil while whisking until fully combined. Season with salt and pepper to taste. If you prefer a slightly thinner dressing, add a few drizzles of water until the desired consistency is reached.
3. Place all of the salad ingredients on a large cutting board. Drizzle generously with the dressing.
4. Using a knife, chop everything together until well combined and evenly coated with the dressing.
5. Place the chopped salad mixture onto your bread of choice, and enjoy!
