The problem: our breakfast lineup is giving “a meeting that could have been an email” vibes. The solution: this vegan, gluten-free, Chocolate Chip Banana Bread Baked Oats recipe from Toluwani Gbalajobi, founder and CEO of The Kitchen Conversation.

“Start off your morning with a healthy recipe that’ll satiate your sweet tooth,” she says. “This recipe is the best way to kickstart your mornings. It’s ready in 30 minutes, nutritious, and a sneaky way to have chocolate for breakfast. You can easily modify these ingredients by switching out your favorite dairy-free milk, nut butters, or sweeteners.”

Chocolate Chip Banana Bread Baked Oats

Ingredients:

1⁄2 banana
1⁄2 cup rolled oats
1⁄4 teaspoon cinnamon
1⁄8 teaspoon nutmeg
1⁄4 teaspoon baking powder
2 tablespoon agave
1 tablespoon nut butter
1⁄3 cup water (or dairy-free milk)
1⁄2 teaspoon vanilla
1 tablespoon mini vegan chocolate chips

cinnamon sugar topping (optional):
1⁄2 teaspoon white sugar
1⁄8 teaspoon cinnamon

Instructions:

1. Preheat the oven to 350° F.
2. Add the banana, nut butter, rolled oats, cinnamon, nutmeg, baking powder, agave, water, and vanilla into a blender (or a food processor). Thoroughly blend together.
3. Pour the batter into an oven-safe bowl. Mix in and top the oats with chocolate chips and cinnamon sugar.
4. Bake the oats for 22-24 minutes and enjoy!
