I’m not a huge breakfast person, so these little chia seed puddings work so well for me. I snack on them while doing morning drop-off and know that I’m still getting something nutritious in my body without having a full meal. I have truly fallen in love with the endless possibilities to come out of this little jar, and you’ll find them in my fridge at any given time.
Chia seeds are full of fiber, which keeps you full longer, resulting in less snacking throughout the day. They are also a great source of antioxidants and have very strong anti-inflammatory properties. I like to make about five or six jars at the beginning of the week and sometimes have my kids create their own. It’s five minutes of work that yields breakfast or snack options for the entire week. If you’re familiar with my simple meals, then you know how I feel about easy recipes, and with only two ingredients, this one takes the cake. Once you’re ready to eat, you can literally add anything, such as granola, shredded coconut, cinnamon, nuts, fresh fruit, dried fruit, seeds, and nut butters.
