It might have “wheat” in the name, but don’t let that deter you gluten-intolerant readers. It’s a totally gluten-free grain. And although it’s not a 1:1 substitution in all baking recipes (and it certainly has a more present flavor), it’s a great grain to cook and eat whole. Or, try using the ground flour in some of your favorite goodies, like cookies or pancakes.
Buckwheat isn’t just a gluten-free grain, aka what we consider carb volume. It’s packed with nutrients, fiber, and even protein, making it an ultimate beauty food. Dr. Jeffrey Bland, world-renowned nutritional medicine expert, “Father of Functional Medicine,” and Founder of Big Bold Health explains:
“Buckwheat, which is not related to wheat at all, has been eaten and used medicinally for thousands of years. It’s high in minerals and antioxidants.
Unlike many other grains (cough, quinoa, cough) buckwheat is low in phytic acid, which can inhibit the absorption of vital nutrients. Its low phytic acid profile coupled with high amounts of manganese, copper, magnesium, iron, and phosphorus, make it an excellent food for recovery, development, metabolism, sleep, and mental health.
It keeps you fuller longer.
Due to its high insoluble fiber content, buckwheat keeps you fuller for longer (provides bulk) and helps sweep the ol’ tract clean.
