EASY Baked Salmon Balls Recipe

When snack o’clock hits, we like to be prepared with something healthy and filling—like these vegan blueberry energy balls or these collagen protein coconut balls. But sometimes we want something savory to snack on—like these baked salmon balls from Nikki Baumel of My Sweet Belly. These non-traditional meatballs are not only easy to make, they’re also full of protein and healthy fats.

The star ingredient is salmon, a good source of omega-3s. These fatty acids are considered essential for our health but can only come from our diets. Omega-3s play a role in everything from heart health to reducing inflammation to potentially helping with depression.

The salmon balls are super light and fluffy and make for a delicious snack, Nikki says. (Just remember: nobody likes the person who brings fish into the office. Maybe save this snack for when you’re at home.)

Baked Salmon Balls

Recipe Type:Snack

Serving Size:8 servings
Prep Time:15 mins.
Cook Time:20 mins.
Total Time:35 mins.

Ingredients:

1 lb wild-caught salmon (skinless), cubed
1/2 medium sweet onion, chopped
Generous 1/4 cup of gluten-free breadcrumbs
3 tablespoons cilantro, finely chopped
2 teaspoons minced garlic
1 egg white
1 teaspoon pink salt
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon pepper

Instructions:

1. Preheat oven to 350°F.
2. Add all the ingredients into a food processor and blend until fully combined.
3. Line a baking tray with parchment paper or foil.
4. Using the palms of your hands, roll about 2 tablespoons of the salmon mixture into a ball and place on the tray. Repeat until all the mixture has been used.
5. Bake for 20 minutes or until the salmon balls are golden around the edges.
6. Serve with a creamy green jalapeño or chimichurri sauce.
7. Enjoy!
