Dairy-Free ALMOND BUTTER STUFFED DATES

Here is another one of our favorite guilt-free, dairy-free sweet treats. Trust us when we say, you won’t be able to eat just one. These almond butter stuffed dates, dipped in dairy-free dark chocolate, are the perfect way to satisfy any sweet tooth, without the remorse that usually follows after indulging. Made with vegan, gluten-free, sugar-free chocolate chips and almond butter, this tasty snack is actually full of health benefits. Dates are high in fiber and disease-fighting antioxidants. They also promote brain health and are full of vitamin B and C. Some people even say it’s a good idea to eat a couple dates a day as part of your daily routine, so why not start with this Poosh-approved version below.

Dairy-Free Almond Butter Stuffed Dates

Serving Size:Makes 12
Prep Time:5-10 minutes
Cook Time:1 hour
Total Time:1 hour and 10 minutes

Ingredients:

1 package organic dates
1 jar unsweetened almond butter
1 bag of vegan, sugar-free dark chocolate chips (we recommend using Lily’s Dark Chocolate Chips that are Stevia sweetened)
1 tablespoon coconut oil
Sea salt

Instructions:

1. Remove the pits from all the dates.
2. Gently split each date so it breaks halfway open.
3. Lay the dates on a baking sheet.
4. With a teaspoon, gently put a dollop of almond butter inside each date and squeeze it together, as if to close it up again.
5. In a small pot over low heat, place the chocolate chips and coconut oil and stir until completely melted.
6. With a spoon or fork, gently scoop up each almond butter stuffed date and dip into the chocolate, then place back on a baking sheet.
7. Top with sea salt.
8. Freeze for at least one hour.
9. Take out anytime for the most perfect, guilt-free snack.
