Enter: this 2-Ingredient Oat Tortillas recipe from bestselling cookbook author Carleigh Bodrug. She shared this easy, affordable way to make gluten-free, vegan tortillas on her Instagram, and we’ve been making them non-stop—they’re perfect to use in Kim’s plant-based taco recipe and to turn these healthy salad ideas into wraps.
2-Ingredient Oat Tortillas

2 cups rolled oats
1 ½ cups water
1. Combine ingredients in a bowl and let soak for five minutes.
2. Transfer to a high-speed blender and combine until smooth. The batter should be a little more watery than pancake batter, so add more water as needed.
3. Heat oil or vegan butter in a non-stick pan over medium heat. Pour ¼ cup of the batter into the pan in a circular shape and cook until the top begins to bubble, then flip. Cook until golden brown and pliable.
4. Add desired toppings, and enjoy!
